Attestation of Specificity
The attestation of specificity is a designation that focuses on tradition rather than on a specific region of origin.
Agricultural foods and products that benefit from this designation must, for example, originate from traditional raw materials (raw milk Emmental cheese), be prepared in a traditional manner (old-style jam) or be fabricated using traditional types of production and/or processing methods.
A calf or a farm pig raised under its mother's care, or champagne cider would be typical examples of this designation.
A product granted a certificate of specificity may have been manufactured anywhere in Quebec.
